8 Point Dinner ~ Stir Fry Rice and Chicken Breast

Ingredients

1 tsp garlic powder
1 tsp Lawry's® Seasoned salt 25% less sodium
1 tsp onion powder
1 tsp black pepper
1 tsp cayenne pepper
1 oz red wine
1 cup(s) cooked broccoli
1 cup(s) baby corn ears
1 cup(s) instant long grain and wild rice mix
3 piece(s) Tyson Boneless Skinless Chicken Breasts, Cut up not fine
1/2 cup(s) red wine
Uncle Ben's Long Grain & Wild Rice

Instructions

Begin by cleaning chicken breast and removing any fat that you can. You may boil it beforehand to remove excess fat. Put in a bowl and add seasoned salt, garlic poweder, onion powder (or chopped up onions), black pepper, and cayenne pepper. Add red wine and let sit for a few minutes. You may let it sit for as long as an hour. Use Pam spray on wok and add drained chicken to the wok. Cook until done. Add broccoli with corn and mix.

The rice used was cooked based on instructions on box. Add rice and seasoning packet to boiling water and cooks withing 5 minutes.

You can either add the rice as a side on the dish or mix in with the stir fry. I mixed it in to make it easier on portion control and less tupperware!

Day 6 ~ 6 Point Breakfast - 9 Point Dinner

This morning I had my Arnold Selects and egg whites for b-fast. I drink it with an 8 ounce glass of Crystal Light... 0 points! Yum!

So since it was a snow day today guess what I did... slept! So much so that I slept right through lunch! Then I woke up and bathed KLE and did her hair while she slept. By the time she woke up it was time for dinner!

I know I wanted to cook something but I was unsure of what. I didn't feel like rice so I decided to make my ground turkey burgers that I bought when I went shopping. I decided to dust off my George Foreman Grill and grill my turkey up! I planned on eating 1 but for some reason I put two! I guess out of habit as I used to eat two burgers for dinner. I just saved that for my mom! I didn't want to eat 8 points of turkey burger (not counting the bread) and I was also afraid of being hungry after one burger so I decided to boil a small corn on the cob and put a small salad on the side with some balsamic vinaigrette dressing.

Let me tell you, this whole thinking up of ways to cook isn't too hard. You just have to have the time and patience to do it! I'm very satisfied and happy with what I've chosen to eat! I'll attach a pic below except it doesn't show the meat... sorry!

Need More Fiber

Today I did great! Oatmeal for breakfast, salad for lunch, and rice with legume for dinner. I had fruit and chocolate (1point) for snack. The only problem I had was that I woke up (TMI alert) constipated. Instead of getting some benifiber I just age broccoli and an apple crisp and that helped! I'm uber excited about these new methods and I think my body is wowed by the surge of healthy food I'm taking in. I still have two obstacles I need to get over. Drinking my daily servings of water and exercising. I already know I'm not going to the gym today so I'll make up for it by doing some crunches... Till next time!

Midday Lunch/Snack - 7 Points!

Can't stay on too long so I'll list my delicious midday lunch (around 4 pm). I had a Thomas' 100% Whole Wheat mini bagel, whipped cream cheese, a General Mills 90 calorie Fiber One chocolate bar, 1/4 of carrot juice (fresh made with vanilla essence! Yum!!), and an orange. Very simple and satisfying! I'm happy!

Brunch - 8 Points

I had a Brunch today. I ate at 11:30 am (today is Saturday! Don't judge me!) So since I missed breakfast I decided to have a hearty lunch! I ate Egg Beaters - Egg Whites, onions, pepper, Lawry's salt, garlic, and food coloring. The reason I put the food coloring (orange) is because I'm so used to my parents doing it all these years. Orange eggs look better than yellow lol. I made my eggs scrambled/omelet style and put it on Arnold's Selects 100% whole wheat sandwich thins with less than a tsp of butter. I also had a half a cup of Tropicana orange juice and a banana. I never made this before so I was real skeptical. I took the first bite and... OMG it was heaven! My dad was sitting next to me so I had him take a bite. He liked it! My dad has high cholesterol and high blood pressure but he's thin. I told him that since he loves eggs so much that he should eat egg whites instead of regular eggs. I bet that would bring his cholesterol way down because that's the only thing that he eats that's high in cholesterol. He agreed! Score one for daddy! Now I just have to convince my mom! She's at church so when she comes home I'll have that talk with her. If I can get the whole family to switch over that's great because not only will I save money in groceries but I'm helping everyone become healthier and/or thinner! Well That was brunch for me! Weight Watchers - Day 3

Sorry I haven't updated you guys on my meals. I've just been soo busy! Not only do I have regular things in my life (plus a one year old) I now have to plan meals! It's not annoying (yet) because it gets me excited about different and new healthy food I can create! I haven't eaten anything yet this morning. I searched for egg white recipe's because I'm in the mood for eggs. I'm going to cut up some veggies and mix in some spices and make an egg white omelet. No meat because even when not dieting I never used to put meat in my eggs. Just at restaurants.
Forgot to mention I ran across a problem yesterday! It was 10 pm and I had not eaten dinner and I had 14 points left to eat! I was able to eat 11 points real quick. I had some fruit (even though that's 0 points), a half a cup of whole milk, a 1 point WW carrot cake, and 3 points of snack. I got to be better at this! My plan today is to cook for the week. Lunch and dinner... I'll let you know how that works lol.

Wow... Starting over after a new year

So its been a year since I started this blog to help me lose weight. As you can see I started off well and I fell off. With the death of my Uncle and the Haiti (my parents homeland) tragedy (lost an older cousin) I fell off. I've been off and on diets all year but I never really stuck to anything.
So let me update you guys a bit. I've moved back to NY and regained a social life again. Still a mom! Baby girl is 17 months. Still married! Together for 7 years now. Still fat! I weigh 220 :(. At my new job there are more people my age which I'm ecstatic about.
After some thought I've decided to join Weight Watchers which I'll refer to as WW. I'm going to do the online program with a couple of my coworkers. The online program is best for me because I have a gym membership with Planet Fitness so I'll will be working out in my spare time.
I'm not really trying to get to a specific weight but my long term weight goals are as follows. I want to break under 200 lbs, I want to lose my gut, and I want to be a size 10-12. Those are reasonable goals right? Right!

So I'm on my way to work today and as soon as I get a free moment I will sign up. I'm trying to decide if I should buy a book or keep my journal on my phone. I always have my phone with me so that would be convenient but maybe having an actual book will remind me! I don't know yet. Maybe my Blackberry or iPod touch has an app for that.
Well I'll get back to ya'll in a bit. Going to make my decision and plan my breakfast.
